I came up with this one after my first love and I broke up. Mac and cheese has always been a huge comfort-food favorite for me, and this particular recipe helped me gain back the weight I lost in the early weeks after the breakup.
It’s a spin on Hamburger Helper, because I always wanted to eat that when I was growing up, but my mother wouldn’t let us. She made everything from scratch, and I was always told, “Chatels don’t eat boxed foods.”
1 box of Annie’s Mac & Cheese (personally, I prefer the bunny-shaped kind)
1 bag of Morningstar Grillers Crumbles (or ground burger for the meat eaters)
1 jar of sundried tomatoes
1 bag of shredded cheddar cheese
1/4 cup milk
Follow the instructions on the Annie’s box to make the mac and cheese. Once the pasta is cooked, cook the crumbles in a pan with a bit of butter. As the crumbles are grilling, prepare the mac and cheese as instructed, then dump it back in the pan.
Put the burner on low, add the shredded cheese and stir until it’s melted. When it starts to get thick, add the milk. Once everything is melted and gooey, add the crumbles and sliced sundried tomatoes. Mix well … then voila!
This could probably serve four or five, but let’s be honest … you’ll eat two helpings yourself, and then have the leftovers for breakfast.
